Tomato Jam

Ingredients

3 lbs chopped tomatoes
2 fire roasted red peppers, chopped
Zest and juice of two limes
1 1/2 cups granulated sugar
1/2 cup clover honey
1/2 cup champagne vinegar
1 teaspoon cinnamon
1 teaspoon chile powder
Pinch of crushed red pepper
1/2 cup basil, chopped
1 tablespoon kosher salt

Directions

Combine all ingredients in a heavy bottomed sauce pan. Bring to a boil then immediately reduce to a simmer. Simmer approx 2 hrs stirring frequently until you reach desired consistency. Chill and serve. 

Can be jarred in a sealed container for up to a year
